It would be great if the reports could be higher functioning like QuickBooks or at least be able to access more detailed reports e.g. run a report on outstanding invoices per category. It seems this is supposed to be an option but I am unable to generate it.

I desperately need the income/expense report to separate the income out by category.....inventory, tuition, etc. Running a report to pay quarterly sales tax on the income from inventory is very difficult, since it all gets lumped together as "income".
@Kristin - you can see a list of all outstanding invoices from the Invoice List. What do you mean when you say a list of outstanding invoices "per category"? What categories are you referring to? Besides this report you mentioned, are there any other details you'd like to see in specific reports?
